Pancreatitis menu

Pancreatitis is a disease of the pancreas, during which the cells of the organ are destroyed by their own enzymes. In the deterioration phase, the gland cells are destroyed, in the remission phase, connective tissue is formed at the site of dead cells. This greatly disrupts the work of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, so treatment should begin with diet.

Dietary recommendations for each patient should be selected individually, depending on the severity of the condition, the stage of the disease, food intolerance and comorbidities. The following menu for pancreatitis is suitable for the remission phase (ie for the period when there is no worsening) and will help to avoid the next worsening.

Basic menu principles for pancreatitis:

  1. The purpose of the diet is to improve the work of the pancreas, to reduce the load on the digestive system.
  2. Limit simple carbohydrates - sweets, bakery products, sugar. Sugar is partially replaced by xylitol or sorbitol. Of sweets allowed - jam, honey, jam.
  3. Fractional diet - 5-6 times a day.
  4. Cooking - steamed, baked and boiled. It is necessary to wipe the tough meat and vegetables rich in dietary fiber (carrots, broccoli, cabbage, fresh herbs).
  5. The temperature of the dishes is normal, cold dishes are excluded.
  6. During the remission period, the diet menu may include vegetable and cereal soups. At the same time, the vegetables must be well cooked.
  7. You can use meat, skinless poultry, lean varieties of fish, cooked and baked. Do not use offal (liver, kidneys, brain), smoked meat, salted fish, caviar, sausages, canned food.
  8. Of the permitted dairy products - cottage cheese (up to 20%), milk, sour-milk drinks, sour cream in dishes.
  9. Eggs are recommended to use in the form of omelets or soft-boiled. It is better not to use fried eggs or hard boiled eggs.
  10. In the phase of remission in pancreatitis, it is necessary to include various vegetables and fruits in the diet in raw, baked, cooked, stewed form. In the period of deterioration, fresh vegetables and fruits are excluded.
  11. Drinks - weak tea, coffee with milk, rosehip soup and fruit drinks diluted in half with water, fruit juices without sugar. Excluded - black coffee, cocoa, carbonated drinks.
  12. Do not use foods that stimulate the digestive system: spinach, sorrel, radishes, radishes, garlic, mushrooms, pickled vegetables, sour fruits.
  13. Be careful with spicy spices - horseradish, mustard, pepper. You can use - dill, primrose, basil, cinnamon.
  14. Alcohol with pancreatitis is strictly contraindicated.

Fresh fruits can be added to the lower menu for pancreatitis, for example, apples, pears, bananas, peaches, apricots, non-sour plums, etc. and supplement the diet with fermented dairy products - kefir, yogurt, yogurt, fermented baked milk.

Monday

meals for pancreatitis on Monday

Breakfast:sweet pilaf with dried fruit;

Dinner:chicken noodle soup; zucchini and eggplant baked in the oven with cheese;

Afternoon snack:milkshake with strawberries and banana;

Dinner:halibut fillet in the oven.

Nutritionist's comment:

To make sweet pilaf suitable for a patient with pancreatitis, exclude nuts and cranberries from it and reduce the amount of sugar to 1 tablespoon.

We add vegetables to the soup without frying, this will reduce the load on the pancreas.

Spicy spices must be excluded from recipes.

I recommend choosing a cocktail milk with a fat content of no more than 2. 5%, and as for coffee, it is better to exclude it from the recipe, it is not recommended to use this product with pancreatitis.

You can use any of the methods to prepare seafood fillets, both are fine in case of illness. You can choose a side dish with cereals, for example, cooked buckwheat or vegetables - cauliflower, broccoli, potatoes, zucchini, etc. Choose a way of cooking vegetables that does not overshadow the taste of the fish or cause deterioration, for example, cook vegetables or steam them.

Nutritionist's comment:

The porridge recipe recommends reducing the amount of sugar or using sweeteners.

It is better to remove the garlic from the soup recipe and add the vegetables without frying.

When cooking zucchini, try not to use hot spices and garlic, and it is easy to stew vegetables for stuffing in a little water or soup.

You can supplement the dinner with vegetables, fresh or steamed.

Dinner:rice soup with meatballs; zucchini stuffed with vegetables;

Afternoon snack:strawberry smoothie;

Nutritionist's comment:

You can add grated cheese, herbs or stewed tomatoes to the omelette.

As an addition to fresh cheese, you can choose sweet fruits or berries, herbs, herbs, carrots or pumpkin. Be careful with nuts and sour fruits, they are not recommended for patients with pancreatitis.

Saturday

Breakfast:oatmeal in milk in a slow cooker with apples and raisins;

Dinner:salmon ear; pans with pasta, broccoli and cheese;

Afternoon snack:carrot and apple salad;

Dinner:simmer in a slow cooker.

Nutritionist's comment:

You can use only cinnamon for the spicy porridge, and it is better to refuse ginger and nutmeg.

Unfortunately, you will also have to give up walnuts in a carrot salad, this is a heavy food for the pancreas, but you can add dried fruits to the salad, for example dried apricots or a handful of raisins.

Sunday

Breakfast:poached egg;

Dinner:kulesh; zucchini stuffed with rice;

Afternoon snack:Banana oatmeal smoothie;

Dinner:pangasius fillet in a slow pot.

Nutritionist's comment:

You can add fresh vegetables or a couple of spoons of cooked rice to breakfast.

To make kules more suitable for our menu, the vegetables should be stewed with a little water or soup. Try to choose beef without veins and bundles.

When cooking zucchini, you will need to discard the garlic and not fry the vegetables, but simmer them with a little water or broth.
